Beak Trails is a luscious Double IPA that presents as a soft, luminous fluffy cloud in the glass. The sensory experience is driven by an innovative hop bill featuring the experimental HBC630 variety, alongside the iconic Nelson and Citra. Together, they create an intense aromatic profile of sweet berries and sun-ripened peach, contrasted by the sharp, white-wine acidity of gooseberry. Despite its 8% strength, the beer maintains a smooth, rounded delivery where the neutral malt presence serves purely to elevate the vivid, modern hop character. It finishes with a delicate, lingering fruitiness that masks the underlying power of this potent ale.
Appearance. SRM 6-8. Deep gold to light orange; opaque with a persistent, dense white head that leaves significant lacing.
Aroma. High intensity hop aroma dominated by sweet raspberry and cherry-like berry notes, complemented by ripe peach and a distinct white wine-like gooseberry character. Malt is low and neutral, providing a soft grainy background. Fermentation esters are lightly fruity but clean.
Taste. Vivid hop-forward flavors of sweet berries and stone fruit (peach) transition into a sharp, tangy gooseberry finish. Malt flavor is low, providing a soft, clean, and slightly bready support. Bitterness is moderately high but remains smooth and well-integrated, lacking any harshness. The finish is medium-dry with a lingering fruity hop resin aftertaste.
Mouthfeel. Medium-full body with a soft, pillowy, and creamy texture. Carbonation is moderate. A smooth, restrained alcohol warmth is present but well-hidden by the beer's fluffy mouthfeel; no hop-derived astringency.
