Beak Mallow
Imperial IPA 8 º
Beak Mallow is an assertive Double IPA that showcases an expressive hop profile of Citra, Galaxy, Idaho-7, and the unique Anchovy variety. The sensory experience is led by a powerful aromatic burst of tangerine and raspberry, underscored by a whimsical lemon sherbet brightness. Significant additions of oats and wheat create a remarkably velvety, thick texture that carries these juicy, tropical flavors across the palate. Despite its 8% strength, the beer remains exceptionally drinkable with a soft, supportive malt backbone and a hint of spice, concluding with a firm, clean bitterness and a lingering fruity finish.
Appearance. Pale gold to light orange (6-8 SRM). It presents with a persistent, dense, white head and a characteristic haze from the heavy use of wheat and oats.
Aroma. High intensity hop aromatics. Dominant notes of sweet tangerine, ripe raspberry, and tropical passionfruit from the Galaxy and Citra hops. A unique candy-like berry note is present, supported by a faint pine and spice depth from the Idaho-7. Malt is neutral and grainy.
Taste. The initial impression is a saturation of fruit flavors, specifically lemon sherbet and citrus zest. A complex mid-palate of red berries and tropical fruit is supported by a soft, bready malt character. Hop bitterness is firm but smooth, balancing the juicy fruitiness. The finish is medium-dry with a lingering, clean hop presence.
Mouthfeel. Medium-full body with a distinctively velvety and creamy texture due to the protein-rich grist. Carbonation is moderate. A gentle, well-integrated alcohol warmth is present without harshness or astringency.
