Beak’s Jelly is an evocative Double IPA that bridges the gap between intense hop saturation and the delicate sweetness of South Downs honey. The pour is intensely hazy, yielding aromas of ripe strawberry from Mosaic and the distinct floral lift of jasmine via Loral hops. On the palate, a silky mouthfeel carries decadent flavors of toasted coconut from Sabro, supported by a complex sweetness reminiscent of baklava and burnt honey crumpets. At 8% ABV, the beer remains exceptionally smooth, balancing its firm bitterness with a rich, honeyed depth that lingers alongside a clean, tropical finish.

Appearance. Pale gold to light orange (6-8 SRM); opaque, foggy haze; thick, creamy white head with excellent persistence and intricate lacing.

Aroma. High intensity; dominant notes of mixed berries and strawberry, layered with floral jasmine and a distinct coconut creaminess; background hints of wildflower honey and a neutral, doughy malt profile.

Taste. Initial hit of tropical fruit and floral spice; Mosaic provides juicy berry notes while Loral adds a refined herbal tea quality. Sabro introduces a bold coconut mid-palate. Honey contributions manifest as rich, toasted sugars and nutty baklava, leading to a moderate-high bitterness that never turns harsh. Finish is medium-dry with lingering honeyed toast.

Mouthfeel. Medium-full body with a remarkably silky, pillowy texture; moderate carbonation; light, well-integrated alcohol warmth; very low astringency despite the massive dry-hop.
