This Kölsch presents a refreshing yet sophisticated profile, leaning into its unfiltered nature to offer a touch more depth than typical filtered examples. A soft, grainy-sweet malt backbone provides a clean foundation, accented by delicate notes of orchard fruits like pear and apple. The hop character is understated but essential, contributing a whisper of floral and spicy notes that lead into a crisp, highly attenuated finish. Appearance. Pale gold to medium yellow (approx. 4 SRM). While traditionally brilliant, this unfiltered version exhibits a slight, attractive haze. Topped with a delicate, frothy white head with moderate persistence and light lacing.

Aroma. Low intensity with a clean, grainy-sweet malt profile. Subtle, pleasant esters of apple and pear are present, complemented by a very low floral and herbal hop presence. Extremely clean fermentation character with no sulfur or diacetyl.

Taste. Initial impression is a soft, grainy malt sweetness with light bready notes. This is quickly balanced by a medium-low bitterness and a subtle spicy hop flavor. Faint fruitiness adds complexity without sugary sweetness. The finish is remarkably clean, dry, and soft, avoiding any harshness or lingering bitterness.
