Sir Beercious is an English IPA that bridges traditional structure with modern hop aromatics. The sensory profile is defined by a bright, fruity bouquet where the citrus and floral notes of Cascade and Mosaic hops take center stage. Underneath this vibrant hop layer, a sturdy backbone of bready and biscuity malts provides support, though a pleasant, moderate bitterness remains the focal point. This award-winning ale finishes dry and clean, offering a balanced yet hop-forward experience that emphasizes freshness and drinkability over heavy malt sweetness, resulting in a refined character that lingers gracefully on the palate.
Appearance. Deep golden to light amber in color with brilliant clarity. Pours with a moderate-sized, persistent off-white head that maintains good retention and leaves light lacing on the glass.
Aroma. Moderate to high hop aroma featuring distinct notes of citrus zest and floral blossoms from Cascade and Mosaic. Beneath the hops lies a medium-low bready and biscuity malt presence with very low fruity esters.
Taste. Initial impression is a moderate, assertive hop bitterness that prevails over the malt. Flavors of citrus and meadow flowers lead into a medium-low bready malt mid-palate. The finish is medium-dry to dry, with a clean, lingering bitterness that avoids being harsh or astringent.
Mouthfeel. Medium body with a smooth, well-attenuated texture. Carbonation is moderate to medium-high, providing a crisp sensation. Alcohol warmth is very low and well-integrated.
