This award-winning Double IPA presents a vibrant tapestry of modern hop character, led by the unmistakable synergy of Citra and Mosaic hops. The sensory experience is dominated by a bouquet of bright citrus, delicate floral notes, and lush tropical fruit. Despite its 7.5% strength, the malt profile remains clean and supportive, allowing the complex hop oils to shine without being overshadowed by heavy sugars or excessive caramel. A firm but balanced bitterness provides structure, leading to a crisp, dry finish that emphasizes drinkability. It is a refined expression of the style, focusing on aromatic intensity and a smooth, refreshing palate.
Appearance. Gold to light orange-copper in color (approx. 8-10 SRM) with good clarity. It supports a moderate-sized, persistent, off-white head that leaves consistent lacing on the glass.
Aroma. High intensity hop aroma featuring prominent notes of grapefruit and lime from Citra, alongside tropical mango, berry, and floral complexity from Mosaic hops. Malt presence is low and neutral, providing a clean, grainy backdrop. Fermentation is clean with very low fruity esters.
Taste. The initial impression is an explosion of citrus and tropical fruit flavors. The hop character is intense and complex, echoing the aromatic floral and fruity notes. Bitterness is medium-high (60 IBU), providing a firm punch that is well-balanced by a light, unobtrusive malt presence. The finish is medium-dry with a lingering hoppy aftertaste and no harshness.
Mouthfeel. Medium body with a smooth texture. Carbonation is medium-high, providing a lively mouthfeel. A light, restrained alcohol warmth is present but remains well-integrated and smooth.
