This Double IPA presents a deceptive sensory profile that balances a soft and juicy mouthfeel with a formidable 8% alcohol punch. An intense dry-hop regimen featuring Citra, Mosaic, and BRU-1 drives the aromatic profile, delivering a layered bouquet of tropical pineapple, ripe mango, and citrus zest. Despite its plush texture, the palate reveals a firm, classic bitterness that asserts itself against a clean, neutral malt backdrop. The interplay of stone fruit from the Mosaic and the distinctive pineapple notes of BRU-1 creates a complex fruit character, while the Citra adds a bright, resinous finish that masks its potent alcohol presence until the lingering, bitter aftertaste.
Appearance. Deep gold to light orange-copper (6–10 SRM); features a slight haze consistent with heavy dry-hopping; topped with a moderate-sized, persistent off-white head that leaves decorative lacing.
Aroma. High intensity hop aroma dominated by tropical fruit (pineapple, passion fruit) and citrus (grapefruit); subtle berry and stone fruit notes emerge alongside a faint, clean, crackery malt base and a hint of smooth alcohol.
Taste. Initial impression is a wave of tropical fruit flavors, specifically pineapple and mango, followed by a firm, assertive bitterness typical of the style. Low, supportive malt provides a soft, bready foundation. The finish is medium-dry with a lingering resinous and citrusy hop character and no harshness.
Mouthfeel. Medium body with a notably smooth, soft texture; moderate carbonation provides a gentle lift; restrained but noticeable alcohol warmth reflects its strength without being solventy.
