On the palate, expect a firm, clean bitterness that defines the style, supported by a lean, grainy malt backbone. The finish is remarkably dry and refreshing, emphasizing the fresh hop character and sparkling carbonation. Appearance. Brilliant clarity with a pale gold to deep yellow color. Topped by a persistent, medium-sized white head that leaves delicate lacing as it recedes.
Aroma. High hop intensity featuring prominent floral notes, fresh white grape, and a touch of lemon zest from the Mistral hops. A very low, clean, bready malt presence supports the hop bouquet. Fermentation is exceptionally clean with no noticeable esters or phenols.
Taste. The initial impression is a sharp, clean hop bitterness that leads into flavors of kumquat, floral honey, and subtle melon. Low grainy malt provides a neutral base. The balance is decidedly hop-forward, culminating in a dry, crisp finish with a lingering, pleasant bitterness and a clean aftertaste.
