Baxbier Hopfkopf 2022
Hopfkopf 2022 is a vibrant Hopfenweizen that bridges traditional Bavarian craftsmanship with modern American hopping. This pale gold, hazy pour opens with a classic Weissbier aromatic profile of ripe banana and spicy clove, courtesy of a traditional German yeast strain. However, the double dry-hopping with American hops transforms the experience, layering in pungent aromas of mango, passion fruit, and bright citrus. On the palate, a soft, bready wheat backbone supports a juicy tropical fruit intensity, balanced by a crisp, spritzy carbonation. The finish is remarkably clean and dry, leaving a lingering impression of zesty hops and subtle peppery phenols.
Appearance. Pale gold (5 SRM) with a deep haze from high wheat content and suspended yeast; supports a thick, moussy, long-lasting white head with excellent lacing.
Aroma. High intensity featuring dominant esters of ripe banana and spicy clove phenols. These traditional notes are overlaid with a potent tropical hop character of mango and citrus, all supported by a background of bready, doughy wheat malt.
Taste. Initial impression of creamy wheat malt followed by a burst of tropical hop flavor. Moderate banana and spicy clove yeast character is well-balanced against a soft, grainy wheat profile. Bitterness is low-moderate, providing a clean, relatively dry finish with a lingering tropical citrus aftertaste.
Mouthfeel. Medium body with a fluffy, creamy fullness that remains refreshing. High, effervescent carbonation provides a spritzy sensation, accompanied by a light, well-integrated alcohol warmth.
