This International Pale Lager is a masterfully lean collaboration with Garrett Oliver, specifically tailored for the vibrant heat of Thai cuisine. The addition of Rice ensures a bone-dry, crackery canvas that highlights the high-toned, zesty brightness of Kalamansi fruit. A subtle addition of salt sharpens the citrus profile, providing a refreshing minerality that cuts through rich flavors. The profile is impeccably clean, displaying a brilliant clarity and a crisp, effervescent snap. It is a highly-attenuated, thirst-quenching brew where the citrus-forward aromatics and lightning-fast finish prioritize drinkability and palate-cleansing precision.
Appearance. Pale straw (2-3 SRM). Brilliant clarity with a white, frothy head of moderate persistence and fine-beaded lacing.
Aroma. Moderate intensity of zesty Kalamansi, reminiscent of lime and tangerine. Low grainy-malty character with a distinctively clean, crackery rice quality. Fermentation is neutral with no esters or phenols.
Taste. Initial impression is crisp and dry. Light, neutral grain and crackery rice flavors are secondary to the bright, citric punch of Kalamansi fruit. Bitterness is low, well below typical style limits, providing just enough structure. A faint hint of salt emerges in the finish, enhancing the citrus zip. The aftertaste is very short, clean, and refreshing.
Mouthfeel. Light-bodied with high carbonation. Notable carbonic bite on the tongue. Zero alcohol warmth and no astringency, feeling exceptionally smooth and thin but not watery.
