This celebratory Double IPA delivers an enveloping sensory experience characterized by its dense malt base of barley, oats, and wheat. The innovative use of HBC 1019, Citra, Motueka, and Galaxy hops creates a vivid profile inspired by salsa verde, swapping traditional herbs for intense notes of peach in syrup, passion fruit, and bright lime zest. A deceptive herbaceous freshness balances the high-gravity sweetness, leading into a fruit-candy finish. At 10% ABV, the beer presents a rich, plush texture where tropical intensity meets a grounding bitterness, resulting in a complex and festive pour that emphasizes hop-derived freshness.

Appearance. Deep gold to light orange-copper (8–12 SRM). Opaque haze with a thick, persistent white head and heavy lacing.

Aroma. High intensity. Pronounced stone fruit (peach in syrup) and tropical notes (passion fruit) from Galaxy and Citra. Bright citrus zest (lime) from Motueka and a unique, slightly spicy herbaceous character from HBC 1019. Low grainy-sweet malt background.

Taste. Initial rush of tropical fruit candies and ripe peach. Mid-palate reveals zesty lime and a subtle green hop flavor reminiscent of fresh herbs. Soft, bready malt support balances the high alcohol. Firm hop bitterness is present but smoothed by residual sweetness. Finish is long, fruity, and sweet with a clean, lingering hop character.

Mouthfeel. Full, viscous, and enveloping body due to high oat and wheat content. Moderate carbonation. Noticeable but smooth alcohol warmth. Creamy texture with no hop-derived astringency.
