Night Bloom is a luminously pale Hazy IPA that showcases a soft, velvet-like texture. Utilizing a grist of Extra Pale malt, malted and flaked oats, and chit malt, it achieves a luxurious, refined body. The sensory profile is dominated by a heavy double dry-hop of Citra and Idaho 7, including their cryogenic counterparts. This results in an explosion of ripe pineapple and juicy papaya, layered with a whimsical fruit-cereal sweetness and nuances of mandarin sorbet. The result is a vibrant, modern IPA where the intense hop character is harmonized by a soft, pillowy mouthfeel and a clean, fruit-focused finish.

Appearance. Pale straw to light gold (approx. 4 SRM). Persistently hazy and opaque with a brilliant shine. Features a dense, rocky, meringue-like white head with high retention and thick lacing.

Aroma. High intensity hop aroma with dominant notes of tropical fruit. Citra provides clear mango and citrus, while Idaho 7 contributes pineapple and stone fruit. Background malt is bready and neutral, supported by clean fermentation esters.

Taste. High to very high fruity hop flavors including ripe papaya, pineapple, and a distinct mandarin sorbet quality. Malt flavor is low and doughy. Bitterness is low-to-moderate and well-restrained, leading to a smooth, off-dry finish with a lingering tropical fruit aftertaste.

Mouthfeel. Medium-full body with a remarkably smooth, velvety texture. Carbonation is moderate. Alcohol warmth is light and well-integrated. Entirely free of hop harshness, astringency, or raw starchiness.
