This Double IPA is a sensory exploration of thiol precursors, utilizing Phantasm grape skins alongside a complex hop bill of Cascade, Mosaic, and Motueka. The nose is an intense explosion of pink guava, white grape, and grapefruit zest, punctuated by a whimsical note of sour candies. On the palate, the experience is remarkably silky and bold, diverging from traditional bitterness to favor lush, ripe flavors of yellow peach and pineapple. The use of Mosaic Cryo amplifies the tropical depth, while the Sauvignon Blanc influence from Phantasm provides a sophisticated vinous finish. It is a full-bodied, modern interpretation of the style that prioritizes fruit saturation and a smooth, velvety mouthfeel.

Appearance. Ranging from gold to a soft orange-copper (7-9 SRM). The beer presents with a significant, persistent white head with fine lacing. While the style allows for clarity, this version displays a pronounced, uniform haze consistent with its silky description.

Aroma. High intensity. Dominated by thiol-driven tropical notes of pink guava and passion fruit. Distinctive Sauvignon Blanc white grape characters from Phantasm merge with the blueberry and stone fruit esters of Mosaic. Motueka adds a bright lime and tropical zest. Malt is a neutral, grainy background.

Taste. Initial impression is a wave of ripe pineapple and yellow peach. Significant white grape flavors persist through the mid-palate. Despite the Double IPA classification, bitterness is perceived as low and soft, allowing the Mosaic hop saturation to lead. Finish is clean but fruit-forward, lacking harshness or heavy residual sweetness.

Mouthfeel. Medium-full to full body with a notably silky and creamy texture. Carbonation is moderate. A gentle, well-integrated alcohol warmth is present at 8% ABV, but there is no hop-derived astringency or burning.

Tras Crush, damos el paso hacia una Double IPA con el uso del precursor de tioles a base de pieles de uva Sauvignon Blanc Phantasm®, que despierta aromas intensos a fruta al interactuar con la levadura durante la fermentación.

Para crear esta cerveza única, añadimos lúpulos Cascade durante el mash, Mosaic junto a Phantasm® durante el whirlpool y rematamos con un dry-hop de Mosaic, Motueka y Mosaic Cryo.

El resultado es un abanico de fruta inmenso con aromas a uva blanca, guava rosa, piña y piel de pomelo, junto al de los caramelos ácidos. En boca resulta contundente, con gran cuerpo y sedosa, sin apenas amargor y con sabores a uva blanca, melocotón amarillo y piña madura.
