Chasing Windmills is a vibrant Double IPA that captures the collaborative spirit of Basqueland and White Dog. This 7.8% brew showcases a lush tropical profile driven by Citra, El Dorado, and the unique Neomexicanus Zappa hop. Intense aromas of papaya, pineapple, and mango lead into a complex palate where juicy passionfruit meets a distinctively spicy, herbal edge. The malt provides a clean, supportive backdrop, allowing the massive hop additions to shine. It concludes with a firm, integrated bitterness and a dry finish, balancing its full-bodied mouthfeel with high drinkability and a modern, hop-forward intensity.

Appearance. Deep gold with a slight hazy sheen. Features a dense, creamy, off-white head with excellent retention and significant lacing on the glass.

Aroma. High intensity hop aroma dominated by tropical fruits including mango, papaya, and crushed pineapple. A secondary spicy, almost savory herbal note from the Zappa hops adds complexity. Very low clean, grainy malt in the background.

Taste. Bold tropical flavors of passionfruit and pineapple are immediate, followed by a unique spicy hop character. Medium-high bitterness is present but clean and devoid of harshness. A light, neutral malt sweetness briefly supports the mid-palate before a dry, lingering hoppy finish.

Mouthfeel. Medium-full body with a smooth, velvety texture. Carbonation is moderate, providing a gentle prickle. A subtle, well-integrated alcohol warmth is present, enhancing the overall depth without being solventy.
