Basqueland’s Palomino is a vibrant Double IPA that showcases a sophisticated hop blend of Idaho 7, Cashmere, and Citra Cryo. Idaho 7 drives a pungent foundation of tropical stone fruit and resinous pine, while Cashmere adds layers of smooth lemon zest and melon. The addition of Citra Cryo amplifies the citrus intensity, offering concentrated lime and grapefruit notes. At 8% ABV, the beer presents a lean, neutral malt profile that ensures the hops remain the primary focus. Expect an assertive bitterness balanced by a remarkably dry finish, delivering the high drinkability and aromatic punch essential to the style.
Appearance.Deep gold to light orange (SRM 7-9) with a moderate-sized, persistent, off-white head that leaves consistent lacing. The clarity is good, though a very slight haze from the intensive dry-hop additions is acceptable.
Aroma.Intense hop aroma characterized by ripe pineapple and apricot from Idaho 7, paired with sharp tangerine and lime zest from Citra Cryo. Cashmere contributes subtle melon and herbal notes. The malt is neutral, grainy, and clean, providing a supportive but minimal background with a very light fruity fermentation profile.
Taste. The initial impression is dominated by complex hop flavors of mango, grapefruit peel, and resin. A moderately high bitterness provides a firm structure but remains smooth and lacks harshness. The malt character is soft and unobtrusive, lacking significant caramel or toast. It finishes very dry and clean with a lingering, pleasant hoppy bitterness and citrus oil aftertaste.
Mouthfeel.Medium-bodied with a smooth, soft texture. Carbonation is medium-high, contributing to a crisp delivery. A restrained, smooth alcohol warmth is present, reflecting its 8% strength without being hot or solventy.
