This Double IPA is a saturated sensory tribute to Simcoe, showcasing the hop variety’s legendary versatility through an unrestrained, massive dry-hop addition. Expect an intense aromatic burst of passion fruit and zesty grapefruit, layered with the hop's signature deep pine resin and unexpected red berry highlights. The palate is defined by high hop saturation from essential oils, delivering a punchy, resinous bitterness that remains clean and smooth. A neutral malt base allows the complex Simcoe character to lead, finishing dry with a lingering evergreen and tropical fruit complexity that celebrates the hop's expressive, unrestrained profile.
Appearance. Gold to light orange-copper color with a slight haze from the heavy dry-hop load. Features a moderate-sized, persistent, off-white head with excellent lacing.
Aroma. High intensity hop aroma featuring prominent notes of passion fruit, grapefruit, and red berries, backed by a strong resinous pine character. Malt is supportive and neutral, providing a clean, grainy background. Fermentation profile is neutral.
Taste. Strong and complex hop flavors of citrus, tropical fruit, and dank resin. Very high bitterness that is firm but smooth and lacking harshness. Low, clean, supportive malt character with a soft, bready quality. The finish is dry to medium-dry with a long-lasting hoppy and bitter aftertaste. Fermentation is clean with very low esters.
Mouthfeel. Medium body with a smooth, oily texture from the heavy hop saturation. Moderate carbonation. Contains a restrained, smooth alcohol warmth appropriate for the strength. No harsh hop-derived astringency.
