This West Coast IPA presents a masterclass in Simcoe hops, delivering a punchy, resinous profile. Bright aromas of pine needles and grapefruit pith are underscored by a hint of passion fruit, reflecting the brewery's clean execution. On the palate, a firm, assertive bitterness takes center stage, supported by a lean, cracker-like malt backbone that ensures a crisp, dry finish. The experience is bracing and refreshingly bitter, true to its American IPA roots, with a lingering citrus peel aftertaste. It balances high hop intensity with a transparent fermentation profile, allowing the complex, forest-like characteristics of the hops to remain the focal point.
Appearance. Brilliant clarity with a pale gold color. Topped by a persistent, fine-beaded white head that leaves significant lacing.
Aroma. High intensity hop aroma dominated by Simcoe. Prominent notes of pine resin, grapefruit zest, and a subtle tropical undertone of passion fruit. Low, neutral grainy malt character with a very clean fermentation profile.
Taste. Initial punch of piney and citrusy hop flavors. Medium-high bitterness that is sharp but clean. Malt is supportive and low, providing a neutral, bready base. The finish is very dry and crisp with a long-lasting, resinous hop aftertaste.
Mouthfeel. Medium-light body with a smooth, crisp texture. Moderate-high carbonation provides a refreshing bite. Very subtle alcohol warmth is present but well-integrated.
