This Imperial Stout presents a decadent, multi-layered sensory experience. A jet black pour is crowned with a dense beige foam, releasing an immediate and intense raspberry aroma. The substantial grain bill of eight different malts provides a dense, chewy foundation with flavors of biscuit and cookie, reminiscent of a fine pastry. Deep roasted notes contribute hints of dark chocolate and licorice, which are beautifully rounded by sweet vanilla. Despite the 10.5% ABV, the alcohol warmth is smoothly integrated into the velvety body, leading to a long, bittersweet finish where the tart fruit and rich malt complexity linger harmoniously.
Appearance. Jet black (40+ SRM) and completely opaque. It supports a well-formed, dense beige head with moderate retention and visible legs indicating high viscosity and alcohol content.
Aroma. High intensity. Pronounced fresh raspberry fruitiness leads, followed by rich layers of dark chocolate, sweet vanilla, and a complex maltiness suggesting toasted biscuit and black licorice. Hop aroma is very low, while a clean fermentation profile allows the specialty ingredients and roast to dominate.
Taste. Bold and rich initial impression of tart raspberry jam. This transitions into a sweet, complex mid-palate of milk chocolate, vanilla, and buttery cookie. The roasted malt character provides a firm backbone of espresso and licorice. Bitterness is moderate to support the high gravity, resulting in a balanced-sweet finish that is never cloying. The aftertaste lingers with dark fruit and cocoa.
Mouthfeel. Full-bodied and very viscous with a velvety, chewy, and luscious texture. Carbonation is low to moderate. A smooth, noticeable alcohol warmth is present throughout but remains well-integrated without being sharp.
