This collaborative Wild Specialty Beer delivers a vibrant, sun-drenched sensory experience, merging the succulent sweetness of nectarine with the sharp, tropical electricity of passion fruit. As a Sour IPA, it balances an approachable lactic tartness against a soft, wheat-leaning malt base. The nectarine provides a rounded, fleshy stone fruit character that softens the high-intensity aromatics of the passion fruit. The result is a highly aromatic and refreshing profile where the acidity elevates the fruit perception without becoming harsh. A subtle, modern hop presence supports the tropical profile, finishing crisp and dry with a lingering tang of exotic fruit.
Appearance. Pours a hazy, glowing apricot to deep gold (SRM 5-7) with a moderate, frothy white head that shows fair retention for a sour; light lacing persists on the glass.
Aroma. High intensity aromatics of fresh passion fruit and ripe nectarine dominate the nose. A clean, lactic tartness provides a zesty backdrop, complemented by moderate tropical hop notes and a very low, bready malt presence.
Taste. Initial impression is a bright, refreshing burst of tart passion fruit followed by the mellow, sweet flavor of nectarine. The malt provides a neutral, cracker-like foundation. Hop bitterness is low to avoid clashing with the acidity, allowing the fruit esters to shine. The finish is dry and tart, with a lingering, juicy fruit aftertaste that remains clean and vibrant.
Mouthfeel. Medium-light body with moderate to high carbonation that enhances the perceived tartness. Very low alcohol warmth at 5.7% ABV. A slight creamy texture is present, though the overall impression is one of crispness and high drinkability.
