This complex Wild Specialty Beer showcases the results of nearly three years of evolution, merging a mature, 29-month-old wild ale base with a secondary 7-month aging period on fresh Idaho7 wet hops. The sensory profile is defined by a vibrant interplay between sharp lactic acidity, earthy Brettanomyces funk, and the distinct resinous tropical character of the Idaho7 hops. Expect layers of dried apricot, pink grapefruit, and overripe pineapple balanced against damp oak and a mineral-like dryness. The long maturation provides a seamless integration where the raw, grassy wet hop qualities have mellowed into a sophisticated, multi-dimensional citrus and stone fruit complexity.
Appearance. Pours a slightly hazy, deep golden-orange with a thin, white, rapidly dissipating head and minimal lacing, consistent with its extended aging and acidity (SRM 7-9).
Aroma. High intensity featuring prominent lemon zest and apricot from Idaho7 hops, layered over complex funk—think damp hay and leather. Bright lactic sourness is balanced by subtle notes of toasted oak and a faint, floral honey malt sweetness.
Taste. Initial sharp, clean acidity gives way to a complex mid-palate of pineapple, resinous pine, and citrus peel. The funk is well-integrated, providing earthy depth. Malt is minimal, offering a cracker-like backdrop. The finish is bone-dry and lingering with a touch of pithy hop tannin and oak.
Mouthfeel. Medium-light body with high carbonation that creates a prickly, effervescent sensation. A very slight puckering astringency from the wet hops and oak tannins adds structure without being harsh. Low alcohol warmth.
