This elegant blended wild ale, Ellen, showcases a sophisticated maturity derived from two years of oak barrel aging. Brewed with Tennessee-grown grains and fermented with a house mixed culture, it presents a complex bouquet of rustic earthiness, wet hay, and aged leather, layered over vibrant notes of apricot and dried citrus. The influence of Brettanomyces is unmistakable but refined, offering a sensory profile that is profoundly dry and crisp. Nuanced oak tannins provide a structural backbone, while the finish is long, echoing with delicate stone fruit esters and a hint of wild funk characteristic of a well-aged Brett Beer.
Appearance. Deep straw to pale gold (SRM 3-5). Highly effervescent with a delicate, white mousse-like head that fades to a persistent ring; slight haze remains from the rustic grain and can conditioning.
Aroma. High intensity. Dominated by complex funk including wet hay, leather, and barnyard notes, balanced by ripe stone fruit (peach, apricot) and citrus peel esters. Subdued oak presence adds vanilla and dusty wood notes over a low rustic grain sweetness.
