Baron Brewing’s collaborative West Coast IPA presents a vibrant tapestry of classic Pacific Northwest aromatics. The interplay of Simcoe, Columbus, and Centennial hops drives a bold sensory experience, leading with pungent pine resin, damp earth, and bright grapefruit zest. Its foundation is built on a clean, unobtrusive malt profile that ensures the aggressive hop bitterness remains the focal point without becoming harsh. This American IPA finishes crisp and decidedly dry, inviting another sip through a lingering resinous aftertaste. It is a quintessential representation of the style, balancing high hop intensity with a lean, refreshing body and brilliant clarity.

Appearance. Medium gold to light amber (6–9 SRM). Brilliant clarity with a medium-sized, persistent white head that leaves significant lacing on the glass.

Aroma. High intensity hop aroma characterized by resinous pine, grapefruit peel, and a distinct dank, herbal quality. Low, clean, grainy-sweet malt supports the hops. Fermentation is clean with no discernible esters.

Taste. Initial impression is a sharp, clean bitterness followed by intense hop flavors of citrus pith, resin, and spice. Low crackery malt sweetness provides a brief counterpoint before a very dry finish. Bitterness is firm and lingering but not harsh, with a clean, hoppy aftertaste.

Mouthfeel. Medium-light body with a smooth, crisp texture. Medium-high carbonation provides a refreshing bite. Features a very light, well-integrated alcohol warmth and no astringency.
