Baron Brewing

Shonks is a vibrant Hazy IPA that captures a legendary spirit through an intense double dry-hopped profile. Built on a foundation of Nelson Sauvin and Citra hops, the sensory experience is defined by saturated layers of tropical and stone fruits. Aromas of fresh mango and ripe peach lead into a complex palate where the Nelson Sauvin introduces a sophisticated gooseberry and white wine edge. The Citra provides a bright, zesty lime backbone that cuts through the soft malt base. With its thick, juicy texture and restrained bitterness, this beer finishes with a soft fruit essence and a pillowy mouthfeel.

Appearance. Straw to light gold (4 SRM) with a high degree of hazy opacity and a luminous shine. Pours with a thick, rocky, meringue-like white head that demonstrates excellent retention and leaving heavy lacing.

Aroma. High-intensity hop aroma featuring prominent notes of ripe mango, peach, and zesty lime. Secondary layers of crushed gooseberry and white grape from the Nelson Sauvin are evident. Low bready and grainy malt presence in the background with clean, neutral fermentation esters.

Taste. Leading with a massive burst of tropical fruit and citrus flavor. The mid-palate reveals layers of peach and juicy mango from the Citra, followed by the distinctive gooseberry and melon character of Nelson Sauvin. Malt flavor is low and bready, providing a soft cushion for the hops. Perceived bitterness is low to medium-low, finishing off-dry and smooth with a lingering, fruit-saturated aftertaste.

Mouthfeel. Medium-full body with a thick, juicy, and pillowy texture. Carbonation is moderate. Displays a smooth character with no hop harshness or astringency and a very light, well-integrated alcohol warmth.
