Baron Brewing

Running With Scissors is a vibrant Hazy IPA that showcases a global trio of hops: Riwaka, Eclipse, and Mosaic. This 6.2% pour bursts with a lush sensory profile defined by overripe mangoes and succulent peaches. The New Zealand Riwaka contributes a distinct tropical punch, while the Australian Eclipse provides bright citrus notes, and the American Mosaic rounds out the profile with complex stone fruit and berry layers. A soft, bready malt backbone supports the massive hop intensity without becoming cloying. It finishes with a gentle, restrained bitterness and a lingering fruit-skin sweetness, embodying a juicy character that is both drinkable and texturally pillowy.

Appearance. Color is a luminous straw-gold (4-6 SRM). It exhibits a hazy, nearly opaque clarity with a luminous shine. The head is a medium-large, rocky, white meringue-like foam with high retention and beautiful lacing.

Aroma. High intensity hop aroma dominated by overripe mango, peach, and passion fruit. A clean, lightly bready malt character sits in the background. The fermentation profile is clean and neutral, allowing the tropical and citrus hop qualities to remain the primary focus without any grassy or herbal notes.

Taste. High to very high fruity hop flavor mirroring the aroma with prominent mango, peach, and mandarin citrus. The malt flavor is low to medium, tasting of fresh grain and light bread. Perceived bitterness is moderate but soft, never harsh, balancing the off-dry finish. The aftertaste is a lingering medley of tropical fruit and soft malt.

Mouthfeel. Medium-full body with a soft, smooth, and pillowy mouthfeel. Carbonation is moderate. There is a very light, well-integrated alcohol warmth and an absence of any astringency or raw starch texture.
