This potent Double IPA is a singular tribute to the Simcoe hop, showcasing an aggressive 44g/L hopping rate that creates a literal Simcoe soup. The sensory profile is dominated by a prickly pine forest character, weaving intense resinous notes with underlying hints of passion fruit and grapefruit. The 8.4% ABV provides a smooth, warming backbone that supports the massive hop saturation without veering into cloying sweetness. Clean, neutral malts allow the complex, woodsy, and citrusy oils of the Simcoe hops to take center stage, finishing with a firm, lingering bitterness that defines the style's assertive yet drinkable nature.

Appearance. Deep gold to light copper (8-10 SRM) with a slight, acceptable haze from the heavy dry-hopping. It supports a dense, persistent white head with excellent lacing.

Aroma. An intense, pungent bouquet of resinous pine, damp earth, and woodsy spice. Secondary notes of dried apricot and grapefruit pith emerge over a very low, clean, neutral malt base with a hint of alcohol warmth.

Taste. Leading with a sharp, assertive bitterness, the flavor delivers saturated notes of spruce tips and resin. A lean, supportive malt profile provides a soft, crackery foundation before a bone-dry finish. Alcohol is present but well-integrated, enhancing the hop spice.

Mouthfeel. Medium-bodied with a smooth, oily texture from the hop resins. Carbonation is moderate-high, providing a crispness that balances the high alcohol strength and light, clean warmth.
