Black Ditch is a decadent, high-gravity Imperial Stout that leans into its dessert-like profile with a luxurious, sticky character. At 11% ABV, the beer presents a massive sensory canvas layered with the intense aromatics of Ugandan vanilla beans and rich Peruvian cacao nibs added during primary fermentation. The inclusion of lactose provides a creamy, velvet-like sweetness that balances the deep, roasty foundation of the base stout. Expect a complex interplay of dark chocolate, burnt caramel, and a warming alcohol presence that integrates seamlessly with the adjuncts, creating a harmonious yet intensely indulgent experience that emphasizes texture and depth.

Appearance. Jet black and completely opaque (40+ SRM). Crowned by a dense, deep tan head with moderate retention. The high viscosity and alcohol content are visible as thick legs on the glass when swirled.

Aroma. High intensity with a rich blend of bittersweet chocolate and Peruvian cacao nibs. Deep layers of Ugandan vanilla beans offer a marshmallow-like sweetness, complemented by heavy caramel and dark roast coffee notes. Very low esters of raisin and plum are present, with a smooth, noticeable alcohol warmth and no perceptible hop aroma.

Taste. The initial impression is intensely sweet and chocolate-forward, driven by both the cacao and lactose. Malt flavors of burnt caramel, toast, and heavy roast provide a sturdy backbone. Hop bitterness is moderate but perceived as lower due to the high residual sugar and adjunct profile. Ugandan vanilla beans provide a lingering, creamy mid-palate, leading to a long, sweet finish of cocoa and warming alcohol.

Mouthfeel. Full and viscous with a chewy, velvety texture. Carbonation is low to moderate, enhancing the luscious creaminess provided by the lactose. A distinct, smooth alcohol warmth is present but well-integrated, with no astringency from the roasted grains.
