Post Mortem #6 is an opulent Imperial Stout that marries deep roasted malts with the sophisticated influence of six months in bourbon casks. The sensory journey begins with an intense core of dark chocolate driven by cacao nibs, complemented by the lush, creamy sweetness of Madagascan vanilla added during fermentation. The barrel aging contributes distinct layers of rich caramel, toasted oak, and a whisper of soft coconut. This complex marriage of spirit and malt creates a bold, luxurious profile where the high alcohol provides a smooth, integrated warmth rather than a sharp bite, resulting in a harmonious and deeply decadent experience.
Appearance. Jet black and completely opaque. It supports a thick, persistent deep tan head with excellent lacing. High viscosity is evident by visible legs when the glass is swirled.
Aroma. High intensity aroma featuring a complex blend of bittersweet chocolate, cocoa, and heavy roasted coffee. Prominent notes of bourbon-soaked oak, rich vanilla, and caramel are layered over subtle dark fruit esters of plum and raisin. A soft coconut character and a clean, warming alcohol presence emerge as it warms.
Taste. The flavor is intensely rich, dominated by dark chocolate and roasted grain.
