Apogee is a profound Imperial Stout that commands attention with its midnight-black pour and luxurious complexity. This blend features threads from various barrel-aged stocks, including distinct Cognac influence that imparts deep notes of dried plum and toasted oak. The sensory experience is dominated by an opulent layering of rich toasted Coconut and creamy Vanilla, which softens the intense roasted malt base of espresso and bittersweet chocolate. At 14% ABV, it offers a significant yet smooth alcohol warmth that integrates seamlessly with the velvety, viscous body. The result is an incredibly deep, dessert-like profile that balances charred grain bitterness with lush, barrel-derived sweetness.
Appearance. Jet black (SRM 40+) and completely opaque. A dense, deep tan head forms but shows moderate to low retention, eventually fading to a thin collar and leaving thick, oily legs on the glass indicative of high viscosity.
Aroma. High intensity; a rich bouquet of dark roasted coffee and cocoa powder interwoven with prominent toasted coconut and aromatic vanilla. The Cognac barrels contribute sophisticated notes of raisin, fig, and charred oak, accompanied by a clean, warming alcohol presence.
Taste. The initial impression is massive and decadent. Deep layers of dark chocolate and roasted grain meet intense toasted coconut and sweet vanilla bean. The Cognac-aged components provide a vinous complexity, suggesting dark stone fruits and spicy oak. Bitterness is moderate but firm, providing enough structure to offset the significant residual sweetness. The finish is long, warming, and laden with lingering chocolate and coconut.
Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Carbonation is low, enhancing the beer’s immense viscosity. A noticeable, smooth alcohol warmth is present throughout, providing a comforting glow without any harsh or solventy edges.
