IPA - India Pale Ale 5.7 º 45 IBU
This Specialty IPA represents a global collaboration, delivering a sensory bridge between European tradition and American hop intensity. The grist, featuring Munich and Caraamber malts alongside Spanish wheat and oats, creates a soft, golden-amber foundation. A vibrant hop profile driven by Cascade and Amarillo provides bright citrus and floral layers, while Columbus adds a grounding resinous depth. The use of Belgian yeast introduces a sophisticated ester and phenol profile, weaving notes of clove and stone fruit into the grapefruit-forward hop character. The result is a refreshing, bitter, and highly aromatic ale that balances spicy yeast complexity with a clean, resinous finish.
Appearance. Deep gold to burnished copper (8–12 SRM) with a slight, attractive haze from the wheat and oat proteins. Pours with a dense, persistent off-white head that leaves significant lacing.
Aroma. Moderate to high intensity featuring a complex blend of grapefruit, orange zest, and piney resin. These hop notes are layered over Belgian yeast esters of pear and apricot, with a distinct spicy phenolic character reminiscent of white pepper and clove. A light toasted malt and honey-like sweetness provide the background.
Taste. Initial impressions of citrus and resinous hops are quickly followed by a spicy, fruity yeast character. The Munich and Caraamber malts offer a subtle bready and light caramel sweetness that tempers the 45 IBU bitterness. Mid-palate reveals lemon peel and herbal notes, leading to a crisp, dry finish with a lingering botanical bitterness and a faint spicy aftertaste.
Mouthfeel. Medium-light body with a noticeably soft and creamy texture provided by the oats and wheat. Carbonation is moderate-high, enhancing the refreshing quality. Very low alcohol warmth with no astringency.
