BAPBAP Septante Neuf
This organic Belgian Tripel presents a sophisticated departure from heavy, syrupy interpretations, focusing on elegance and drinkability. A foundation of locally sourced Pilsner malt provides a delicate canvas of fresh bread and honeyed cereals. The aromatic profile is led by the expressive Abbey yeast, which contributes refined notes of clove and nutmeg over subtle peppery phenolics. While the use of Ariana and Fuggles hops introduces a faint herbal and earthy complexity, the bitterness remains moderate and well-balanced. The result is a highly attenuated, effervescent ale where the 7.9% ABV is integrated seamlessly, finishing remarkably dry with a lingering spicy-floral character.
Appearance. Deep yellow to pale gold (5-6 SRM) with brilliant clarity. Features a long-lasting, creamy, and rocky white head that leaves characteristic Belgian lacing as it slowly recedes.
Aroma. Moderate to high intensity with a complex bouquet. Grainy-sweet malt notes of fresh bread and light honey are prominent, complemented by significant spicy phenols of clove and nutmeg. Low fruity esters suggesting pear and citrus are present, alongside a very low, earthy, and herbal hop character.
Taste. The initial impression is of soft, grainy Pilsner malt sweetness, which is quickly overtaken by spicy yeast-derived flavors of clove and pepper. Hop flavor is low with herbal and earthy qualities from the Fuggles. Bitterness is firm and provides excellent balance to the malt, leading into a very dry, crisp finish. The aftertaste is clean with a lingering spicy-fruity yeast character and a touch of floral hops.
Mouthfeel. Medium-light body that feels deceptively thin for its strength. High carbonation creates a prickly, effervescent sensation. Alcohol warmth is smooth and low, providing a pleasant glow without any harshness or syrupy weight.
