This Double IPA presents an intricate sensory profile driven by a unique hopping schedule. The presence of Mosaic, Chinook, and Centennial hops creates an intense bouquet of tropical fruits, notably pineapple and passionfruit, layered over resinous pine and bright citrus zest. A golden, hazy pour reveals a firm malty body that provides necessary structure against a powerful, rolling hop bitterness. The interplay between the punchy hop oils and a clean, supportive malt base ensures a tight, balanced finish. It remains exceptionally drinkable despite its strength, offering a complex yet cohesive experience of modern American hop character that balances intensity with refinement.
Appearance. Gold to light orange (8 SRM) with a dense, persistent off-white head that leaves thick lacing. The body is hazy to opaque.
Aroma. High intensity hop aroma featuring prominent tropical fruit (Mosaic), resinous pine (Chinook), and bright grapefruit (Centennial). Malt is low and neutral, offering a light bready background. Clean fermentation profile with a very subtle, smooth alcohol note.
Taste. Strong, complex hop flavors dominated by pineapple, mango, and citrus peel. Bitterness is firm and high but lacks harshness. Malt flavor is low to medium, providing a soft, grainy backbone without residual caramel sweetness. The finish is dry with a long, lingering hoppy and bitter aftertaste.
Mouthfeel. Medium body with a smooth, velvety texture. Moderate carbonation. Noticeable but well-integrated alcohol warmth. No harsh hop-derived astringency.
