Baird Dark Sky
Baird Dark Sky is a formidable Imperial Stout that balances a maelstrom of roasted malts with a torrential dry-hop profile. The sensory experience is dominated by deep layers of dark chocolate, toffee, and espresso coffee, punctuated by the distinctive herbal and citrusy resins of Centennial and Amarillo hops. These American varieties lend a sharp, pungent edge to the aromatic profile, which also reveals hints of black licorice. On the palate, the beer is silky and enveloping, moving from a rich malt sweetness to a characteristically acrid, warming finish. It is a complex, intensely flavored black ale with a satisfyingly round yet aggressive presence.
Appearance. Opaque jet black (40+ SRM) with a thick, creamy, deep tan head that shows excellent persistence and leaves significant lacing on the glass.
Aroma. High intensity aroma featuring a complex blend of roasted coffee, bittersweet chocolate, and anise. The dry-hopping contributes a prominent layer of herbal, floral, and citrusy hop character from the Centennial and Amarillo additions, backed by subtle dark fruit esters and a hint of caramel sweetness.
Taste. Bold initial impression of roasted grain and cocoa, followed by flavors of toffee and black licorice. High hop bitterness is reinforced by a resinous and herbal hop flavor. The balance leans toward the roasted and hoppy side, culminating in a dry, slightly acrid finish with a lingering burnt-malt aftertaste and noticeable alcohol warmth.
Mouthfeel. Full-bodied and chewy with a velvety, luscious, and silky texture. Carbonation is moderate. A smooth, well-integrated alcoholic warmth is present, enhancing the mouth-filling character without becoming sharp or solventy.
