This 2019 vintage spontaneous Danish Wild Ale presents a complex marriage of rustic funk and agricultural nuance. Infused with clover hay during the cooling process in the koelschip, the profile is defined by sun-dried grass, earthy meadows, and a deep floral sweetness. The high alcohol content is masterfully integrated behind a bright acidity and a dry, effervescent structure. Expect layers of stone fruit and aged citrus peel driven by the wild microflora, evolving into a leather-like funk with a clean, lingering finish of dried herbs and honeyed malt. It is a sophisticated, terroir-driven expression of a Brett Beer.
Appearance. Deep gold to pale amber (7-10 SRM) with a slight, natural haze typical of spontaneous fermentation. Pours with a dense, ivory head that shows moderate retention and fine lacing.
Aroma. High intensity with a complex bouquet of funky Brettanomyces—think wet hay, aged leather, and farmyard earthy notes. The clover hay addition contributes distinct dried grass and sweet floral aromas, complemented by ripe apricot and bruised apple esters. Malt is subtle, offering a honeyed, cracker-like background.
Taste. The palate leads with a sharp, crisp dryness and a delicate, non-lactic tartness. Flavors of sun-dried clover, earthy spice, and toasted grains are prominent. Fruit notes lean toward preserved lemon and white peach. Bitterness is low, allowing the wild yeast character and hay-derived tannins to provide structure. The finish is remarkably dry and long, echoing with rustic herbal notes.
Mouthfeel. Medium body that feels lighter due to high attenuation. High carbonation creates a lively, spritzy prickle on the tongue. A gentle alcohol warmth is present but well-integrated, accompanied by a very light, pleasant tannin-driven astringency from the hay.
