This Double IPA is an intensive showcase of hand-selected Simcoe hops, delivering a complex sensory profile built upon a plush malt foundation. The aroma and flavor profile are dominated by the signature Simcoe character, featuring bright notes of mandarin flesh, ripe stone fruit, and zesty grapefruit. Despite its 8.2% strength, the beer maintains a high level of drinkability with a clean, supportive malt presence that balances the aggressive yet smooth hop bitterness. It pours with a soft, inviting radiance, promising a deep immersion into the multifaceted resinous and tropical nature of modern American hop selection.

Appearance. Gold to light orange-copper with a soft, modern haze. Features a persistent, creamy off-white head with intricate lacing.

Aroma. Intense hop aroma characterized by resinous pine, zesty grapefruit, and mandarin. Supportive neutral maltiness with faint notes of stone fruit and a clean fermentation profile.

Taste. Powerful hop flavors of mandarin flesh, apricot, and grapefruit pith. High bitterness that remains smooth and lacks harshness. A soft, bready malt backbone leads into a medium-dry, lingering hoppy finish.

Simcoe is not only one of our favorite hops to brew with but it is also at the root of some of our favorite hoppy beers.We taste notes of mandarin flesh, stone fruit and grapefruit. We’re very excited to be able to share this high octane display of Simcoe with you!
