Bad Seed Brewing

Neu School reimagines the traditional German Pils through a modern lens, balancing Old World structure with West Coast vibrance. A base of crackery malt provides a crisp foundation for a sophisticated hop profile featuring Hallertau Mittelfrüh, Citra, and Mosaic. The classic floral and herbal spice of Hallertau Mittelfrüh melds seamlessly with the bright grapefruit of Citra and the subtle tropical berry and pine notes of Mosaic. Brilliantly clear and highly carbonated, this lager delivers a punchy bitterness that cuts through the light malt sweetness, finishing bone-dry. It is a refreshing hybrid that honors heritage while embracing the aromatic intensity of contemporary hopping.

Appearance. Straw to deep yellow (3 SRM); brilliant clarity; creamy, long-lasting white head with fine lacing.

Aroma. High hop intensity featuring a blend of spicy, herbal Hallertau Mittelfrüh and tropical, citrusy Citra and Mosaic; low grainy-sweet, cracker-like malt character; exceptionally clean fermentation profile.

Taste. Initial light doughy malt flavor quickly superseded by assertive hop bitterness; flavors of grapefruit, pine, and floral herbs; medium-high bitterness that lingers into a very dry, crisp, and refreshing finish; clean lager character with no esters.

Mouthfeel. Medium-light body; high carbonation; crisp and snappy with a light minerally edge; no alcohol warmth.

Neu School is the successor to the big success of Neu Zealand, where we took our Neu Pilsner recipe, and played around with New Zealand hops.

This time around - as the label so subtly suggests - we’ve been playing around with American hops - Mosaic and Citra. We still kept 50% Hallertau Mittelfrüh in the boil where Citra was also added, but dry-hopped this exclusively with American hops - Mosaic and Citra.
