This innovative Gose, a collaboration with Humble Forager, reimagines a historical style with a culinary lens. The sensory experience is led by the vibrant aroma of sun-ripened peaches and floral Wildflower Honey, underpinned by a distinct, savory thread of Beechwood Smoked Malt. On the palate, a clean lactic tartness intermingles with the flavors of smoky grilled peach and the delicate, tannic structure of black Peach Tea. The presence of Sea Salt provides a mouthwatering, savory counterpoint to the fruit, while the elevated alcohol content adds more body than a traditional example, finishing dry with a lingering stone fruit essence.

Appearance. 3–6 SRM; pale gold to soft orange with a moderate to heavy haze. Persistent white head with fine bubbles and decent lacing.

Aroma. High intensity; dominant fresh peach and floral honey notes balanced by a clean, woody smoke from Beechwood Smoked Malt. Subtle doughy wheat and a trace of earthy black tea with a light mineral saltiness; no hop aroma.

Taste. Initial impression is sharply tart and fruity. Prominent peach flavor is layered with a savory, campfire smoke character. Mid-palate reveals a soft, doughy malt base and a light, tannic tea astringency. Bitterness is very low, balanced by acidity rather than hops. The finish is dry and refreshing with a clear Sea Salt presence that enhances the fruit and smoke aftertaste.

Mouthfeel. Medium body with high, effervescent carbonation. The salt provides a tingly, mouthwatering sensation, while the tea adds a very slight, pleasant tannic grip. Light alcohol warmth is present but well-integrated.
