Bad Seed Brewing's Leviathan is a monumental English Barley Wine, transformed by 30 months in Heaven Hill Bourbon Barrels. This extended maturation yields a profound sensory depth, where rich bready malts fuse with intense layers of caramel and dark toffee. The aroma is a luxurious tapestry of dried figs, raisins, and vanillin, punctuated by the spicy oak and toasted coconut of the bourbon casks. On the palate, a velvety, chewy texture delivers decadent flavors of molasses and plum, followed by a sophisticated vinous oxidation reminiscent of fine tawny port. The 13% ABV provides a deep, integrated warmth that lingers long into a smooth, complex finish.
Appearance. Deep mahogany with brilliant clarity and ruby highlights (20-22 SRM). Pours with a thin, tan collar and low head retention; prominent viscous legs are visible on the glass due to high alcohol and sugar content.
Aroma. High intensity and deeply complex; dominant aromas of rich toffee, caramel, and toasted bread are layered with intense dark fruit notes of prune and raisin. The Heaven Hill barrels contribute strong vanilla, toasted oak, and a hint of bourbon. Subtle oxidative characters of sherry and port are present from the 30-month aging.
Taste. Initial impression is of massive, multi-layered malty sweetness; flavors of treacle, biscuit, and dark caramel dominate, supported by dried fruit esters. The barrel influence provides wood tannins and vanilla sweetness. Hop bitterness is low to moderate, having faded with time, allowing the malt and bourbon character to lead. The finish is moderately sweet with a smooth, vinous aftertaste.
Mouthfeel. Very full-bodied and chewy with a luscious, velvety texture. Carbonation is low, enhancing the beer's weight. Significant, well-integrated alcohol warmth is present but remains smooth rather than harsh.
