This Imperial Stout presents an imposing sensory profile born from a long boil and double-mashing process. After maturing for thirty-nine months in Heaven Hill bourbon barrels, the liquid has developed a profound complexity. Aromas of deep chocolate and liquorice meld with the signature dark fruit esters of English Ale Yeast. The barrel influence is unmistakable, contributing rich layers of vanilla, toasted coconut, and charred oak. On the palate, the beer is exceptionally viscous and velvety, offering a harmonious balance between intense roasted malts and spirituous warmth. It is a decadent, masterfully integrated expression of the style that highlights the elegance of extended aging.
Appearance. Jet black and opaque (SRM 40+). Pours with a thin, deep tan head that shows low retention due to high alcohol content; heavy viscosity is apparent with visible legs on the glass.
Aroma. High intensity with a rich blend of bittersweet chocolate, black liquorice, and roasted coffee. Pronounced dark fruit esters of plum and raisin from the English Ale Yeast are layered with prominent bourbon barrel notes of vanilla, toasted coconut, and toasted oak. A smooth, vinous alcohol presence is well-integrated.
Taste. Initial impression is intensely rich and malt-forward. Flavors of dark chocolate and liquorice dominate the mid-palate, supported by complex notes of dried figs and prunes. The barrel character provides a sweet vanilla and coconut counterpoint to the charred oak and moderate hop bitterness. The finish is long and warming with a lingering bittersweet roastiness.
Mouthfeel. Full to very full-bodied with a thick, chewy, and velvety texture. Carbonation is low, enhancing the beer's lusciousness. A significant but smooth alcohol warmth is present without being hot or solventy.
