This Imperial Stout offers a massive, viscous profile defined by a meaty malt foundation and intense barrel integration. Aging in Old Forester Bourbon barrels introduces deep layers of toasted oak, rich vanilla, and a distinct spirit-forward warmth that complements the roasted grain character. The exclusive use of Tomahawk hops provides a firm, resinous bitterness and herbal depth that cuts through the malt's dark chocolate and espresso sweetness. It pours nearly opaque with a dense, mocha-colored head, delivering a complex sensory experience where charred wood meets dark fruit and lingering hop spice on a velvety, full-bodied frame.
Appearance. SRM 40+. Jet black and completely opaque. Dense, persistent dark tan to mocha-colored head with moderate lacing. Notable viscosity visible as legs on the glass.
Aroma. High intensity. Potent aromas of dark chocolate, roasted coffee beans, and black licorice. Significant bourbon influence from the Old Forester barrels provides notes of vanilla, caramel, and charred oak. The Tomahawk hops contribute a background of resinous pine and earthy spice. Light dark fruit esters of prune and raisin.
Taste. Initial impact is a rich, bittersweet blend of cocoa and scorched malt. Strong bourbon character follows, bringing sweet oak and brown sugar. The Tomahawk hops provide a bold, herbal, and slightly piney bitterness that balances the 11% ABV and malt weight. The finish is long and warming, featuring lingering notes of espresso, toasted wood, and a clean, resinous hop bite.
Mouthfeel. Full and chewy body with a velvety, luscious texture. Carbonation is low to moderate. Noticeable and smooth alcohol warmth is present but well-integrated, lacking harshness. High viscosity and creaminess.
