This Imperial Stout presents a decadent, dessert-inspired profile modeled after tiramisu. It leads with a profound intensity of espresso and rich cocoa, layered over a luscious foundation of sweet vanilla and sponge-cake maltiness. The high alcohol content contributes a noticeable, integrated warmth that complements the velvet-like texture. Dark fruit esters of raisin and prune emerge beneath the dominant pastry elements, while a roasty bitterness provides just enough structure to keep the sweetness from becoming cloying. It is an indulgent, complex experience that balances the aggressive roast of a traditional stout with the creamy, confectionary nuances of the classic Italian dessert.
Appearance. Jet black and opaque (40+ SRM). Pours with a dense, dark tan head that shows moderate retention. Distinct legs are visible on the glass, reflecting the high alcohol and significant viscosity.
Aroma. High intensity. Dominated by rich espresso coffee, bittersweet chocolate, and sweet vanilla. Malt character is deep and toasty, reminiscent of ladyfinger biscuits. Subdued dark fruit esters of figs and plums are present, with very low earthy hop notes. Alcohol is noticeable but smooth and well-integrated.
Taste. Initial impression is very sweet and rich. Strong flavors of dark roasted coffee and cocoa nibs meld with a creamy vanilla sweetness. Malt flavors provide a bready, cake-like backbone. Bitterness is moderate to firm, though largely masked by the high residual sugar and adjunct character. The finish is long and sweet with a lingering roasted coffee aftertaste.
Mouthfeel. Full to very full-bodied; extremely viscous, luscious, and chewy. Low carbonation enhances the velvety mouthfeel. Significant but smooth alcohol warmth is present throughout. No perceptible grain or hop astringency.
