This Imperial Stout presents a sophisticated marriage between roasted depth and the vinous elegance of Barossa Shiraz barrels. Nine months of aging imparts robust, spicy red wine characteristics that weave through a foundation of bittersweet chocolate and toasted oak. The sensory profile is defined by a deliberate medium-full body, allowing the vinous acidity and spicy tannins to sharpen the dark fruit notes of plums and raisins. A smooth, warming finish reveals layers of cocoa and refined wood character, balancing the intense roast with a complex, vinous complexity that distinguishes this barrel-aged expression.
Appearance. Opaque jet black (40 SRM) with a dense, creamy, deep tan head that shows moderate retention. High alcohol and viscosity produce visible legs when the glass is swirled.
Aroma. Rich and intense, featuring primary notes of dark chocolate and espresso roast. High vinous presence from the Shiraz barrels contributes spicy berry and black cherry notes, complemented by toasted oak and a hint of vanilla. Moderate dark fruit esters like prunes and figs are present, supported by a clean, warming alcohol presence.
Taste. The initial impression is a blend of bittersweet chocolate and roasted grain, quickly followed by the spicy, tannic grip of Barossa Shiraz wine. Dark fruit flavors of blackberry and currant lead into a moderately high bitterness. The finish is fairly dry and lingering, showcasing charred oak, cocoa, and a refined vinous warmth that persists on the palate.
Mouthfeel. Medium-full bodied with a velvety, luscious texture. Carbonation is moderate, providing enough lift to prevent the high alcohol from feeling heavy. A smooth, gentle warmth is noticeable but well-integrated, with a light tannic astringency from the oak.
