At 8.5% ABV, this collaboration with Gallia presents a deep, spice-forward profile where aromatic clove, cinnamon, and star anise take center stage. Bright accents of orange peel provide a citrus lift, while cranberry adds a sharp, acidic fruitiness that complements the underlying wild fermentation. Appearance. Deep ruby to garnet red (15–22 SRM) with a fine-beaded, light pinkish foam head that shows moderate retention. Slight haze is present, common for an unfiltered wild ale with fruit and spice additions.

Aroma. High intensity aromatics lead with a pungent mulled character; distinct notes of spicy cinnamon and clove are primary, followed by the licorice-like sweetness of star anise. Tangy cranberry esters and zest-like orange peel provide a bright top note, layered over a subtle, earthy funk from the wild fermentation.
