This Pyrénéenne Hazy IPA offers a lush, intensely aromatic experience driven by a double dry-hopping of Simcoe and Mosaic Cryo Hops. The sensory profile is headlined by a burst of tropical passionfruit, ripe berries, and a whisper of piney resin. A soft, wheaty malt base provides a supportive, grainy foundation without distracting from the hop-forward juicy character. Its appearance is characterized by a luminous, slight turbidity and a persistent white head. On the palate, the bitterness remains restrained and smooth, leading into a clean, off-dry finish that emphasizes high drinkability and vibrant fruit complexity derived from the concentrated hop oils.
Appearance. Straw to light amber (SRM 4-6) with a luminous, slight haze that remains attractive and not murky. It pours with a thick, meringue-like white head that shows high retention and leaves delicate lacing on the glass.
Aroma. High intensity hop aroma dominated by tropical fruit and citrus. Prominent notes of passionfruit and pine from the Simcoe pair with the blueberry and stone fruit characteristics of Mosaic. The malt is a background note of fresh grain and light breadiness, featuring a clean fermentation profile.
Taste. Massive fruity hop flavor mirroring the aroma, focusing on mango, citrus, and subtle earthy berries. The malt flavor is low but provides a grainy sweetness that balances a moderate but soft perceived bitterness. The finish is smooth and off-dry, avoiding any hop harshness, vegetal notes, or astringency.
Mouthfeel. Medium-full body with a smooth, soft texture. Carbonation is moderate, contributing to a rounded mouthfeel without being prickly. There is a very light, well-integrated alcohol warmth consistent with its strength.
