Avery’s Xolotl is a decadent Imperial Stout that commands attention with its jet-black pour and complex, multi-layered profile. Intense aromas of bittersweet cacao and aromatic vanilla beans meld seamlessly with the spicy, woody presence of cinnamon and a whisper of dried chilies. Bourbon barrel aging imparts deep notes of charred oak and caramel, enhancing the rich roasted malt foundation. On the palate, luscious dark chocolate and espresso flavors are punctuated by a gentle, warming chili heat that lingers alongside sweet vanillins. This full-bodied masterpiece offers a velvety texture and a sophisticated balance of spice and spirit-forward depth.
Appearance.Opaque and jet black (40+ SRM). A creamy, deep tan to dark brown head shows moderate retention, leaving thick, viscous legs on the glass as the beer is swirled.
Aroma.High intensity. A rich bouquet of bittersweet chocolate from cacao nibs and creamy vanilla dominates, layered over dark roasted coffee and toasted malt. Distinctive cinnamon spice and a subtle earthy pepper note are evident, supported by significant bourbon-soaked oak and dark fruit esters of raisin and fig.
Taste.Intensely malty and sweet, featuring layers of dark chocolate, burnt sugar, and espresso. Mid-palate, the cinnamon and vanilla emerge, followed by a slow-building but controlled chili warmth. Hop bitterness is firm and supportive, though softened by the beer’s massive viscosity. The finish is long and complex, highlighting charred oak, spirit-forward bourbon, and a spicy, drying heat.
Mouthfeel.Full to very full-bodied with a thick, chewy, and velvety texture. Carbonation is low, accentuating the beer’s weight. Significant, smooth alcohol warmth is present, complemented by a slight capsaicin tingle from the chilies.
