At 13.6% ABV, the beer pours like motor oil, delivering an intense sensory experience defined by the addition of cherries. These cherries provide a bright, tart counterpoint to deep base notes of bittersweet chocolate, espresso, and molasses. The dark fruit character of the cherries melds with yeast-derived esters of plum and raisin, creating a complex profile reminiscent of a chocolate-covered cherry truffle. Assertive roasted bitterness and a smooth, lingering alcohol warmth ensure this heavy-bodied stout remains balanced despite its immense viscosity and sweetness.
Appearance. Opaque and jet black (40+ SRM) with a thick, creamy, dark tan head. High viscosity is evident in the slow-moving liquid and the prominent legs that form on the glass.
Aroma. Intense and rich aroma featuring heavy roast, dark chocolate, and charred grain. The cherries contribute a distinct tart fruitiness that complements deeper esters of dried figs and prunes. Alcohol is noticeable but smooth, with a very low earthy hop presence.
Taste. Initial impression is a flood of dark cocoa and espresso, followed quickly by the vinous acidity of cherries. The malt provides a complex foundation of burnt toast and black licorice. Bitterness is medium-high, balancing the significant residual sweetness. The finish is long and warming, dominated by bittersweet chocolate and tart fruit.
Mouthfeel. Full to very full-bodied with a thick, chewy, and velvety texture. Carbonation is low to moderate. A significant but non-solvent alcohol warmth is present, contributing to a luscious and coating mouthfeel.
