This Wild Specialty Beer showcases the lush, aromatic potential of sun-ripened apricots, seamlessly integrated into a complex, barrel-aged profile. The aroma leads with a burst of succulent apricot nectar, followed by delicate notes of oak and a whisper of earthy funk. On the palate, a vibrant lactic tartness provides a bright counterpoint to the stone fruit’s natural sweetness, which remains perceptible despite a dry, crisp finish. Subtle wood tannins provide structure, while the wild fermentation adds layers of depth that evolve as it warms. It is a succulent and refreshing ale that balances fruit intensity with sophisticated barrel-aged tartness.
Appearance. Pours a hazy, glowing orange to deep gold (6-9 SRM). The head is off-white with moderate retention, eventually fading to a thin collar with light lacing.
Aroma. High intensity of fresh, juicy apricots dominates. Background notes of lactic acidity, lemon zest, and a subtle earthy funk. Light vanilla and toasted oak from barrel aging are present but secondary to the fruit.
Taste. Immediate, bright apricot flavor with a succulent quality. The mid-palate introduces a firm, clean lactic sourness. Malt is low and cracker-like, providing just enough support for the acidity. Hop bitterness is very low, as is hop flavor. The finish is dry and tart with lingering apricot skin and a touch of woody tannin.
Mouthfeel. Medium-light body with moderate to high carbonation that creates a spritzy, refreshing texture. A light alcohol warmth is present but well-integrated. Very slight astringency from fruit skins and barrel contact.
