This bright, pale gold Saison offers a complex sensory tapestry driven by a 100% Brettanomyces fermentation and vibrant aromatic botanicals. The nose is highly expressive, blending the heady, floral perfume of elderflower with the distinctive, citrus-peel snap of bergamot. These top notes are supported by a rustic, farmhouse funk featuring nuances of wild pineapple and sun-dried hay. On the palate, it is remarkably lean and refreshing, delivering a bone-dry finish. Effervescent carbonation carries delicate flavors of citrus zest and floral spice over a soft, grainy malt base, resulting in a vibrant and sophisticated session-strength farmhouse ale.
Appearance. Pale gold (approx. 4 SRM). Long-lasting, dense, rocky white head with excellent retention and significant Belgian lace. Unfiltered with a slight haze.
Aroma. High intensity. Heady floral elderflower and tea-like bergamot citrus dominate. Significant Brettanomyces character provides notes of tropical fruit, hay, and a light leathery funk. Malt is low and lightly grainy, while hop character is low and spicy.
Taste. Initial impression is tart and floral. Low, soft grainy malt palate is quickly overtaken by medium-high botanical flavors of bergamot zest and elderflower. Fermentation character is complex with fruity esters and earthy funk. Moderate-low bitterness is accentuated by a very high attenuation. The finish is bone-dry and crisp with a lingering floral and citrus aftertaste.
Mouthfeel. Medium-light body with a lean, crisp texture. Very high carbonation, providing a lively and effervescent sensation. No alcohol warmth. Very low tea-like astringency from the bergamot.
