Drift is a vibrant Wild Specialty Beer that showcases a harmonious marriage between rustic fermentation and sun-ripened stone fruit. Intense layers of succulent apricot and juicy peach dominate the profile, supported by a bright, clean lactic acidity. The wild yeast character contributes subtle notes of farmhouse funk, dried hay, and a hint of lemon zest, which weave through the stone fruit esters. This pale, effervescent ale presents a crisp, bone-dry finish where the natural tartness of the apricot enhances the overall refreshment. It is a refined expression of fruit and funk, balancing zesty sourness with the delicate, floral sweetness of its signature ingredients.
Appearance. Pours a hazy, glowing orange-gold (SRM 5-7) with a frothy white head that dissipates fairly quickly to a thin collar, leaving minimal lacing due to the acidic environment.
Aroma. High intensity aromatics of fresh apricot and fuzzy peach skin. Beneath the fruit lies a complex web of lactic tartness, lemon pith, and moderate wild funk reminiscent of wet hay and aged leather. Malt is low and bready, while hop character is virtually absent.
Taste. The initial impression is sharply tart and fruit-forward, featuring bold flavors of tangy apricot and mellow peach. The fermentation character is decidedly sour but clean, with a mild funk that adds depth without being overwhelming. Bitterness is very low, allowing the acidity to provide the structural balance. The finish is very dry, crisp, and refreshing with a lingering stone fruit aftertaste.
Mouthfeel. Medium-light body with a prickly, high carbonation that creates a champagne-like effervescence. Alcohol warmth is very low and well-integrated. A slight fruit-skin tannin provides a touch of mouth-cleansing astringency.
