Appearance. SRM 7-12; displays a soft reddish to hazy pink hue from the sour cherry. The head is moderate in height, off-white with a slight pink tint, featuring fair retention and light lacing. Clarity is hazy due to the heavy fruit additions and lactose.
Aroma. High aromatic intensity characterized by sharp, lactic sourness and a dense medley of fruit. Dominant notes of red sour cherry and tropical passion fruit are complemented by a distinct lime zest brightness. Low grainy malt and no hop aroma. Very clean fermentation with no funky Brettanomyces notes.
Taste. Initial impression is a sharp, mouth-puckering acidity. Flavors of tart cherry and tangy passion fruit dominate the mid-palate, while lime zest adds a refreshing citrus peak. The bitterness is nearly absent, allowing the lactic tartness to lead. A subtle, creamy sweetness from lactose provides balance, preventing a bone-dry finish and lingering as a fruity, zesty aftertaste.
Mouthfeel. Medium-light body, bolstered slightly by the residual mouthfeel of lactose. Carbonation is moderate-high, producing a prickly, refreshing sensation. No alcohol warmth is perceived at 4.8% ABV. Slight puckering astringency from the fruit acids.
