This Double IPA presents an intense sensory exploration driven by a complex quartet of hops. Mosaic leads the profile with punchy notes of ripe blueberry and tropical papaya, while Nelson Sauvin introduces sophisticated nuances of crushed gooseberry and white wine. Riwaka adds a vibrant layer of passionfruit and zesty grapefruit, seamlessly integrated with the distinct coconut and tropical creaminess of Sabro. Despite its potent 9.4% ABV, the beer maintains a lean, supportive malt structure that allows the hop oils to dominate. The result is a bold, modern interpretation that balances firm bitterness with an intricate, multi-layered fruit profile and a smooth, integrated alcohol warmth.
Appearance. SRM 6-9; deep gold to light copper. Pours with a moderate-sized, persistent off-white head with fine lacing. Generally clear, though a light, hop-induced haze is present.
Aroma. High intensity hop aroma featuring prominent tropical fruit (papaya), berry (blueberry), and vinous white grape. Secondary notes of coconut, lime zest, and diesel. Malt is low and neutral, presenting as light crackers. Clean fermentation profile with a hint of smooth ethanol.
Taste. Initial impression is an explosion of tropical and citrus fruit flavors. Mid-palate reveals complex gooseberry and coconut highlights from the Sabro and Nelson Sauvin additions. High bitterness that is firm but not harsh, supported by a low, grainy malt sweetness. Finishes very dry and clean with a lingering resinous and fruity aftertaste.
Mouthfeel. Medium body with a smooth, velvety texture. Carbonation is moderate-high, providing a crisp bite that accentuates the bitterness. A noticeable but well-integrated alcohol warmth is present without being solventy or hot.
